I have devised this recipe so that the goodness of many
vegetables can be added and the ultimate roll can be made without deep frying.
Children and grown-ups like it alike. The choice of vegetables differs from the
region to region.
Colored peppers, broccoli, tofu, soya chunks are smart
alternatives.
Sprouts, blanched nuts can also be added for that extra protein
and crunch. Below is the basic recipe.
For the outer cover
Whole wheat flour -1 cup
Gram flour or Besan- 3 tblspoons
Chilli Flakes , oregano- a pinch
salt -1/2 tsp
water – enough to make a firm dough.
Oil – 1 tsp – to drizzle
on the dough
For the stuffing
Paneer(cottage cheese) -200 grams cubed
Capsicum- 1 diced
onion -2 chopped
tomatoes-2 chopped
beans – a handful- chopped
Green peas- - 100 gms
carrots – 2 medium diced
Garam masala- 1 tsp
Turmeric powder- ¼ tsp
chilli powder- 1 tsp
ginger garlic paste –
1 tsp
Coriander leaves- 2 tbl spoon chopped
oil- 1 tsp
The puffs lined up ready to go in the tandoor.

Method
Combine the ingredients of the dough and let it rest for 15 minutes.
Heat oil in a pan, add onions and sauté . add ginger garlic paste .
Next add all the vegetables and spices, salt and mix well . add ½ cup of water, cover and cook till the vegetables are tender.
Add the paneer and mix well
let it cook for 2 minutes. Cool

How to Proceed.
Roll out rotis of the dough. Place the filling and cover it as shown . Brush oil on all sides and cook either in a tadoor , oven or tava till brown.I have used an electric Tandoor.
Serve warm with chutney or sauce of your choice.
